Mustard Greens with Smoked Beef

Comfort food at its best! Cooked mustard greens with the irresistable aroma of cooked, smoked beef. Just like Mom used to make!


6 cups water
1/2 teaspoon salt
1 bag (1 pound) Green Giant Fresh Mustard Greens
2 slices smoked beef
1 medium Green Giant Fresh onion, sliced in whole rings
1 teaspoon butter
1/4 cup low salt chicken broth
1 teaspoon brown sugar, packed
1 teaspoon red vinegar

Preparation Directions

1. Bring water and salt to boil on medium-high heat in Dutch oven. Add mustard greens; cover and cook 5 minutes. Drain in colander.
2. In Dutch oven, cook beef on medium heat until crisp. Reserve drippings in Dutch oven. Remove beef; drain on paper towels. Crumble and set aside. Add onion and butter to beef drippings and cook until tender; 3-5 minutes. Stir broth, brown sugar and vinegar into onions. Add mustard greens and continue to cook until liquid evaporates. Season with salt and pepper to taste and garnish with beef pieces.

4 side-dish servings.
